Salt & Berry

Ingredients

  • 2 oz. Reposado Mezcal
  • .75 oz. Lemon Juice
  • .5 oz. Bitters
  • .5 oz. Pineapple Juice
  • .5 oz. Simple Syrup
  • 2 Drops Vanilla Extract
  • Raspberry Sorbet

Method

Combine all ingredients to the shaker and fill halfway with ice. Shake for 10 seconds and double strain into a rocks glass rimmed with Raspberry Vanilla Salt. Finally, add 2 scoops of raspberry sorbet on top and garnish with rosemary.

Raspberry Vanilla Salt

1 tbsp. Coarse White Salt

1/2 tbsp. Raspberry Purée

1/2 in Split Vanilla Bean Pod

Method: Take one tablespoon coarse white salt, ½ teaspoon of raspberry purée (store bought or muddle 5 raspberries and strain out seeds) and one ½ inch split vanilla bean pod and mix until coated. Place mixture on parchment paper or foil in oven on lowest temperature and back for 20 minutes. Grind in blender or mortar and pestle until fine.
